Description

A classic, creamy coleslaw featuring shredded green and red cabbage with fresh carrot, tossed in a tangy mayonnaise-based dressing enhanced with vinegar, lemon juice, and subtle spices. Perfect as a refreshing side dish for barbecues, picnics, or everyday meals.

Ingredients

Scale

Vegetables

  • 4 cups shredded green cabbage (about 1/2 medium cabbage head)
  • 2 cups shredded red cabbage (about 1/4 medium cabbage head)
  • 1 medium-large carrot (peeled, trimmed, and coarsely shredded, about 1 cup)

Dressing

  • 3/4 cup mayonnaise (or 1/2 cup mayo and 1/4 cup sour cream)
  • 1 tablespoon granulated sugar (more or less to taste)
  • 2 tablespoons distilled white vinegar (or less to taste)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried onion powder (optional)
  • 1/8 teaspoon ground paprika (smoked or regular, optional)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

Instructions

  1. Prep Vegetables: Place shredded green and red cabbage along with the shredded carrot into a large mixing bowl and set aside, preparing them for the dressing.
  2. Make Dressing: In a medium measuring jug, whisk together mayonnaise, sugar, distilled white vinegar, apple cider vinegar, lemon juice, dried onion powder, paprika, salt, and black pepper until the mixture is smooth and well combined.
  3. Combine: Pour the prepared dressing evenly over the cabbage and carrot mixture. Use salad tongs or clean hands to thoroughly toss and ensure all the vegetables are evenly coated with the dressing.
  4. Chill and Serve: Cover the bowl and refrigerate the coleslaw for at least 2 hours to allow flavors to meld. When ready to serve, take it out of the refrigerator, toss again to redistribute the dressing, taste and adjust seasoning if needed, then serve chilled.

Notes

  • Adjust sugar and vinegar amounts according to your preferred sweetness and acidity balance.
  • For a lighter version, substitute some or all mayonnaise with low-fat yogurt or sour cream.
  • Optional spices like onion powder and smoked paprika add subtle depth but can be omitted if unavailable.
  • Chilling for at least 2 hours enhances flavor melding, but overnight chilling is ideal.
  • Serve as a side salad for BBQs, sandwiches, or as a crunchy addition to meals.
