Ingredients
Scale
Turkey Patties
- 1 pound ground turkey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Eggs and Garnish
- 4 large eggs
- 1 ripe avocado, sliced
- Fresh parsley or cilantro for garnish
- Optional hot sauce for serving
Instructions
- Prepare the Patty Mixture: In a large bowl, combine the ground turkey with garlic powder, onion powder, smoked paprika, dried oregano, crushed red pepper flakes, salt, and black pepper. Mix gently until all spices are evenly incorporated, being careful not to overmix to keep patties tender.
- Form Patties: Shape the turkey mixture into 8 small, evenly sized patties to ensure uniform cooking.
- Cook Patties: Heat olive oil in a large skillet over medium heat. Cook the patties in batches for 3 to 4 minutes on each side until they develop a golden-brown crust and are fully cooked through with no pink in the center. Transfer cooked patties to a plate and keep them warm.
- Cook Eggs: Using the same skillet, crack the eggs and cook according to your preference—sunny side up, over easy, or scrambled—using residual heat and flavor from the patties.
- Assemble and Serve: On each plate, place two turkey patties topped with a cooked egg, along with avocado slices. Garnish with fresh parsley or cilantro. Add hot sauce on the side if desired and serve immediately for a hearty and nutritious breakfast.
Notes
- Patties can be made ahead and refrigerated for up to 3 days or frozen for up to 1 month.
- For a lighter meal, cook eggs using cooking spray instead of oil.
- This dish pairs well with sautéed spinach or roasted sweet potatoes for a complete breakfast.
