Pizza Dough

  • 1 ball of pizza dough (store-bought or homemade)
  • Cornmeal or flour (for stretching dough)

Pizza Toppings

  • 3/4 lb turkey sausage (casings removed)
  • 1 bunch broccoli rabe, trimmed and chopped
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste


Instructions

  1. Prepare the Dough: Lightly dust a clean surface with cornmeal or flour and stretch the pizza dough into your desired shape and thickness, about 12 inches in diameter. Set aside.
  2. Cook the Turkey Sausage: In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the turkey sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  3. Cook the Broccoli Rabe: Using the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant. Add the chopped broccoli rabe, season with salt and black pepper, and sauté for about 3-5 minutes until wilted and tender. Remove from heat.
  4. Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.
  5. Assemble the Pizza: Place the stretched dough on a pizza peel or baking sheet dusted with cornmeal. Evenly distribute the cooked turkey sausage and sautéed broccoli rabe across the dough. Sprinkle the shredded mozzarella cheese and grated Parmesan evenly over the toppings.
  6. Bake the Pizza: Transfer the pizza to the preheated oven or pizza stone. Bake for 10-12 minutes, or until the crust is golden and crispy, and the cheese is melted and bubbly.
  7. Serve: Remove the pizza from the oven and let it cool for a couple of minutes. Slice and serve warm for the best flavor and texture.
