Description

Zhoug is a vibrant, spicy cilantro sauce originating from Middle Eastern cuisine, perfect for adding a fresh and fiery kick to sandwiches, grilled meats, and dips.   • 2 garlic cloves
  • 1 packed cup fresh cilantro leaves
  • 1/2 packed cup fresh parsley

Liquids and Oils

  • Ground cumin (to taste, about 1/2 teaspoon)
  • Ground coriander (to taste, about 1/2 teaspoon)

Instructions

  1. Chop Jalapenos and Garlic: Place the jalapeno peppers and garlic cloves into a food processor. Pulse until they are coarsely chopped, ensuring that they are broken down but not pureed.
  2. Add Herbs and Spices: Add the fresh cilantro leaves, parsley, ground cumin, coriander, cardamom, and a pinch of salt into the food processor. Blend the mixture until it forms a thick, cohesive paste with all ingredients well combined.
  3. Combine with Oil and Lemon Juice: Transfer the herb and spice paste into a bowl. Slowly mix in the extra virgin olive oil and fresh lemon juice until the sauce is smooth and creamy, with a balanced texture and bright flavor.
